So this happened again! I really need to remember to eat the bananas that I buy before they go all brown and squishy.
Rather than make banana bread again I thought I would try to make some biscuits. I wasn't following a recipe so wasn't quite sure how they would turn out.
I started with just four ingredients:
I started by creaming together the sugar and margarine, sieved in the flour and mixed this all together. I then chopped up my bananas and added this to the mix. Once I was sure that this was evenly mixed I started to take small handfuls of the mixture and shape them into rough circles and popped them onto a lined baking tray. I forgot to photograph this step. I then placed them in a 170°c preheated oven for 30 minutes.
I was very happy with the way they turned out. I wasn't sure how the chunks of banana would cook and was half expecting to find a tray of mush. They did feel soft and gooey but I liked that!
Do you have any banana recipes you would recommend?
