I am not the biggest fan of Mince Pies so I thought I would try and make Jam tarts slightly more festive.
When it comes to party treats I love everything to be quick, easy and tasty so it's no surprise that I am starting with ready-to-roll pastry.
I used a round cutter with a crimped edge to make my 12 bases and popped these in a greased tray.
I put a teaspoon of seedless raspberry jam in each base and used the rest of the pastry to make little holly shapes for the top. It's surprisingly hard to make a shape that resembles a holly leaf.
I baked them until golden brown and volia! Easy but still taste great! They would look great with a sprinkling of icing sugar but unfortunately I didn't have any in the cupboard.
